Citric acid (2-hydroxy-1,2,3 propanetricarboxylic acid, C6H8O7) (Figure 1) is a white or colorless, odorless, crystalline solid. It is highly soluble in water, freely soluble in ethanol, and slightly soluble in ether. Citric acid has three carboxyl groups and, therefore, is a good buffer for pH control.
