Beta-glucan is a predominant non-starch polysaccharide composed of linear chains of β-d-glucose linked by β-(1 → 3), (1 → 4), and/or (1 → 6)-D-glycosidic linkage either in branched or unbranched form. The major source of beta-glucan involves cereals, microorganism, mushroom, lichens, and seaweeds.
